lovely meringue and appreciation

So, every once in a while I look at what we are doing here and am so impressed by these amazing pastry chefs. The creativity and skill that it takes to do these things is incredible and I am so appreciative!

Today is one of those days. I packed up a Happy Hour Six Pack for a woman this morning and looked at it and said “yowza”. I seriously said that. Here’s why.

OK, so here is what we have today. Get ready for your mouth to water….

Top Left: Mocha Porter: Porter Chocolate Cake made with Rogue Ales Chocolate Porter Beer. It is filled with Mocha Pastry Cream, topped with Mocha Buttercream and a Crumble of Coffee Beans and Chocolate.

Top Center: Key Lime “Martini”: Lime Cake filled with Lime Curd Pastry Cream topped with Whipped Cream and a Hand Candied Lime Chip

Top Right: Mixed Berry Cobbler ala Mode: Moist Yellow cake filled with Mixed Berry Filling topped with Vanilla Bean Buttercream, Mixed Berry Drizzle and a Pie Crust Cookie

Bottom Left: The Pearl: White Velvet Cake filled with Vanilla Bean Pastry Cream topped with Vanilla Bean Buttercream, Edible Glitter and a Hand Made White Chocolate Pearl

Bottom Center: Lemon Meringue: Lemon Cake filled with Lemon Curd Pastry Cream topped with Blow Torch Toasted Meringue (seriously! you should see this!) and a Homemade Lemon Chip. This is my favorite today, it is DELICIOUS!

Bottom Right: Our Most Popular Cupcake of all: Downtown Cupcake Brown: Devil’s Food Cake filled with Sour Cream Chocolate Ganache topped with our super rich and sweet Fudge Frosting and fresh grated dark chocolate.


And everything is made right here! Lemon Chips, Lime Chips, the White Chocolate Pearls, Cinnamon and Sugar Pie Dough Cookies, Mixed Berry Yummy Goodness, all of it! They are awesome and so committed to quality.

Here is Elizabeth “Toasting” the meringue while curious customers watch. It’s not as easy as it looks!
